Le Miroton – Leftover Beef

Ingredients for 4 servings:

  • 700 g cooked beef, e.g. leftovers from boiled beef or roast beef
  • 700 g onion(s)
  • 2 tbsp flour
  • white wine vinegar
  • salt and pepper
  • Breadcrumbs, freshly grated
  • 80 g butter
  • 500 ml beef broth, possibly more

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Slice the onions into thin rings and fry slowly in half of the butter until light brown. Dust with flour, continue frying, and then deglaze with the stock. Simmer until a slightly creamy sauce forms. Season with salt, pepper, and vinegar. The sauce should be only slightly creamy; it will lose more liquid during the browning and become a little thicker. Pour a little of the sauce into an ovenproof dish, cut the beef into very thin slices, and line the dish in a flaky pattern. Spread the remaining sauce over the sauce. Sprinkle with breadcrumbs and dot with small pieces of the remaining butter. Bake at 180°C for about 30 minutes; the surface should be nice and medium brown and crusty. This dish goes best with potatoes (boiled potatoes, small jacket potatoes, mashed potatoes) and a fresh salad.
