Gnocchi and spinach casserole with chicken and curry

Ingredients for 4 servings:

  • 200 g leaf spinach, frozen
  • 200 g cream
  • salt and pepper
  • little Thai curry powder, red
  • 200 ml vegetable stock
  • 1 onion(s)
  • 500 g gnocchi (from the refrigerated section)
  • 300 g chicken or turkey
  • some fat for frying
  • 1 ball of mozzarella (approx. 125 g)

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Bring the spinach to a boil in the cream, season with salt, pepper, and a little Thai red curry, and gradually add the broth. Briefly fry the gnocchi with the diced onion until crispy, then add the finely chopped chicken and fry. Place the gnocchi and meat in a baking dish and spread the spinach sauce on top. Slice or tear the mozzarella into pieces and sprinkle over the top. Bake in an oven preheated to 180°C (fan oven) for about 15 minutes on the middle rack until golden brown.
