Ingredients for 8 servings:
- 800 g potatoes
- 100 ml milk
- 70 g butter
- e.g. nutmeg
- 300 g mushrooms, brown
- 70 g cheese, grated
- 1 m.-sized onion(s)
- ½ bunch parsley
- 3 tbsp oil for frying
- salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Can be eaten as a side dish or as a standalone dish.
Peel the potatoes and boil in salted water for 20-25 minutes. Peel and finely dice the onion. Trim and slice the mushrooms. Finely chop the parsley. Heat the oil in a frying pan and fry the onions until golden brown. Add the mushrooms and fry for about 15 minutes. Then add the parsley and season with salt and pepper. Stir everything together and set aside. The potatoes should be tender by now. Drain the water and let the potatoes evaporate. Add the butter and mash with a masher or press it through a potato ricer. Stir in the milk. Season with a little grated nutmeg, if desired. Line a baking sheet with baking paper. Using a piping bag or a tablespoon, form the mashed potatoes into nests with raised edges. Fill each with 2 tablespoons of fried mushrooms and sprinkle with grated cheese. Bake in a preheated oven at 200°C for 15 minutes until the cheese is browned.
