Mashed potatoes with cauliflower and broccoli

Ingredients for 2 servings:

  • 175 g cauliflower, cleaned or frozen
  • 175 g broccoli, cleaned or frozen
  • 1 tsp, heaped butter
  • 1 tsp, heaped double cream cheese
  • Himalayan salt
  • pepper
  • Nutmeg, freshly grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cut the cauliflower and broccoli into small florets and the stalks into small cubes. Thaw the frozen cauliflower and broccoli briefly, then chop them into small pieces. Bring a pot of salted water to a boil, add the vegetables, cover, and simmer for about 10 minutes. Test with a knife to see if everything is cooked through. Drain the liquid and return the pot with the vegetables to the stove. Let it evaporate briefly. Add the butter and mash everything with a potato masher. The mash should still be finely chunky. Stir in the cream cheese and season to taste. Serve. This cauliflower and broccoli mash is a delicious alternative to mashed potatoes.
