Ham rolls with sauerkraut

Ingredients for 4 servings:

  • 1 large onion(s)
  • 1 tbsp margarine (diet), for frying
  • 400 g sauerkraut
  • salt and pepper
  • Caraway seeds
  • 8 slice(s) lean cooked ham
  • 2 tbsp mustard, medium hot
  • Fat, for the shape
  • 8 slice(s) cheese (FolEpi), light
  • ¼ liter vegetable broth
  • Paprika powder

Finely chop the onion and sauté with the diet margarine until translucent. Squeeze out the sauerkraut, add it to the onions, and cook for 4-5 minutes. Season to taste with salt, pepper, and caraway seeds. Preheat the oven to 200°C (400°F). Brush the ham slices with mustard, top with the sauerkraut and onion mixture, and roll up tightly. Place in a greased dish. Place a slice of cheese on each roll, pour in the vegetable broth, and bake in the oven for about 20 minutes. Sprinkle with paprika and serve. Serve with mashed potatoes.
