Asparagus with wild garlic oil – pesto in the microwave

Ingredients for 1 servings:

  • 500 g asparagus, green or white, fresh
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • 1 tbsp wild garlic pesto, or wild garlic pureed in olive oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the cleaned and washed asparagus, dripping wet, into a microwave-safe dish, sprinkle with salt and sugar, and brush with wild garlic oil or pesto. Then, depending on the microwave’s wattage, cook for 5-8 minutes at full power. Since microwave oven performance varies greatly, test for doneness after 4 minutes and increase the cooking time as needed. If you need large quantities, a microwave isn’t the best option, as double the amount means roughly double the cooking time. In this case, it might be worth trying cooking the seasoned asparagus in a sealed dish in the oven or wrapping portions in parchment paper (I haven’t tested this yet). Since the asparagus doesn’t leach out due to the cooking water, I find it flavors much more intense in the microwave, and it also requires relatively little cooking time for one person. The specified amount is very generous for one person. As a side dish, it should also serve two people.
