Ingredients for 4 servings:

  • 1 kg leek
  • 2 carrots
  • 1 onion(s)
  • ½ jar of rice, e.g. Tosya or Güllü Pirinc
  • ½ jar water, cold
  • 5 tbsp olive oil
  • lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Turkish leek dish

1/2 glass is approximately 100 ml. Remove the roots from the leeks and remove the top layer of skin. Wash thoroughly and cut into approximately 1 cm thick rings. Peel, wash, and thinly slice the carrots, and dice the onion. Wash the rice. Sauté the diced onion and carrot slices in olive oil. Add the leeks and rice and stir for about 2 minutes. Then add the water and reduce the heat to low. Cover and let it simmer for about 15-20 minutes. When the carrots and rice are cooked through, the meal is ready. This dish is one of the Turkish “olive oil dishes” and can also be eaten cold. Before serving, whether hot or cold, be sure to add a squeeze of lemon juice.
