light version of a panna cotta – a refreshing, unusual dessert

Bring the cream and milk to a boil with the sugar and fruit zest. Soften the gelatin. Once the liquid has boiled, remove from the heat and wait a few minutes. Stir in the squeezed gelatin and, if desired, pour through a fine sieve. Now whisk the sour cream into the liquid and transfer to suitable dessert glasses or molds. Refrigerate for about 3 hours, until the panna cotta is completely chilled. Garnish as desired—perhaps with orange segments and fresh mint. There is an informative forum thread about this dessert that also includes some great variations: http://www.chefkoch.de/forum/2,25,533217/Zitrus-Panna-Cotta.html Note: This panna cotta can also be made with agar agar. Then bring the appropriate amount of the powder to a boil with the cream and milk according to the manufacturer’s instructions and continue as described above.
