Ingredients for 4 servings:
- 500 g tomatoes
- 1 onion(s)
- 40 g ginger
- 1 chili pepper(s)
- 100 ml vegetable stock
- 1 mango(s)
- 1 lime(s)
- 1 tbsp oil
- 1 shot of balsamic vinegar
- Salt
- pepper
- Crème fraîche

Ginger-mango-tomato soup
Deseed the chili pepper. Dice the onion and ginger and sauté with the chili pepper. Peel the tomatoes. Add the tomatoes and vegetable stock. Add the balsamic vinegar. Simmer for 10 minutes. Dice the mango and add half to the soup. Puree everything. Grate some lime zest into the soup. Season with a little lime juice, salt, and pepper. Serve the soup with the mango cubes and crème fraîche.
