Ingredients for 2 servings:

  • 2 red bell peppers
  • 2 green bell peppers
  • 2 onions
  • 3 cloves garlic
  • 3 tomatoes
  • 2 tbsp rosemary
  • 1 tbsp oregano
  • 2 zucchinis
  • 1 eggplant(s)
  • 6 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Cut 2 red and 2 green bell peppers (other colors are fine, of course) into strips, peel and quarter the tomatoes, slice the onions, finely chop the zucchini, and also the eggplant. Add 2 tablespoons of olive oil to a pan and sauté the tomatoes, garlic cloves, bell peppers, and onions for about 15 minutes. Meanwhile, add 3-4 tablespoons of olive oil to another pan and fry the zucchini and eggplant until both ingredients are cooked. Once both ingredients are cooked, add them to the pan with the remaining ingredients and sauté for another 10-15 minutes. Just before the end, add the rosemary and oregano, and season with salt and pepper.
