Crème brûlée

Ingredients for 4 servings:

  • 1 vanilla pod(s)
  • 200 ml milk
  • 300 ml cream
  • 4 egg yolks
  • 40 g sugar
  • 60 g brown sugar for caramelizing

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 5 minutes

First, scrape the seeds from the vanilla pod and place them in a mixing bowl. Then add the milk, cream, egg yolks, and sugar and whisk everything together. Pour the finished mixture into small, shallow, ovenproof dishes and place them in a large roasting tin with hot water, submerging the dishes about halfway. Then place the crème brûlée in the oven at 120°C (fan oven) for about 40 to 50 minutes to set. It should no longer be soft, but not as firm as a pudding. After baking, allow to cool and then rest in the refrigerator for 1 to 2 hours. Finally, sprinkle each layer of crème brûlée with about 1 tablespoon of brown sugar and caramelize it using a gas torch or, alternatively, under a preheated grill in the oven.
