Ingredients for 4 servings:
- 750 g carrot(s) (preferably a round variety)
- 50 g butter
- salt and pepper
- 3 large oranges, organic, 1 untreated
- 1 tsp honey
- 1 tbsp orange liqueur
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes
Wash the carrots, trim off the root ends, then peel them. Melt 30g of butter and sauté the carrots in it, season with salt and pepper. Grate a teaspoon of orange zest from the untreated fruit and juice the orange, then add both to the carrots. Simmer over low heat for 25-30 minutes until the carrots are tender. Then, with the lid open, let the liquid evaporate. Add the remaining butter and honey and sauté, stirring constantly, until the carrots are coated with a shiny layer. Remove from the pan and keep warm. Carefully peel the two remaining oranges, cut into thin slices, heat in the pan with the orange liqueur, and serve with the carrots.
