Ingredients for 4 servings:

  • 1 Hokkaido pumpkin(s)
  • 1 large onion(s)
  • 1 garlic clove(s)
  • some olive oil
  • n. B. Caraway powder
  • e.g. paprika powder
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

vegan, vegetarian side dish

Peel the pumpkin, halve it, remove the seeds, and finely grate the flesh. Finely chop the onion and mince the garlic. Sauté the pumpkin with the grated pumpkin in a little oil and simmer with the lid on over medium heat for about 20-30 minutes, until soft and creamy. Stir frequently to prevent burning. Season with plenty of caraway seeds, paprika, salt, and pepper. Using two spoons, form dumplings and serve as a side dish. Goes well with pork. Can also be served as a spread. Approx. 450 kcal per serving.
