Quick paprika sauce

Ingredients for 4 servings:

  • 1 tbsp clarified butter
  • 2 onions, cut into rings or strips
  • 1 bell pepper(s), red, finely diced
  • 1 tomato(s), peeled, finely diced, alternatively 1 – 2 tsp tomato paste
  • 1 tsp flour
  • 1 tsp paprika powder, mild or hot, as desired
  • 150 ml vegetable stock
  • 100 ml red wine
  • salt and pepper
  • 1 tbsp balsamic vinegar, red

ideal for briefly fried dishes

Brown the onions in hot lard, add the bell peppers, fry briefly, add the tomato or tomato paste, braise briefly, dust with flour, let it simmer briefly, deglaze with vegetable stock and wine, add paprika and balsamic vinegar. Braise for about 20-30 minutes, puree with a hand blender, and bring back to a boil briefly. If desired, add vegetable stock or wine to achieve the right consistency, and season with salt and pepper. If desired, you can set aside a few small diced bell peppers, add them after puréeing, and let them simmer briefly. You can also add a small chili or hot pepper to the sauce to give it a more spicy kick.
