Ingredients for 3 servings:
- 2 bell peppers, red
- 1 leek(s)
- 1 large onion(s)
- 1 garlic clove(s)
- 1 vegetable stock cube
- salt and pepper
- Tabasco
- Paprika powder
- some crème fraîche
- optionally grated cheese (Parmesan or Gouda)

Roughly dice all the vegetables and simmer in broth for about 15 minutes until soft – do not use too much liquid. Purée thoroughly with a hand blender, stir in a little crème fraîche, and season the sauce with the spices. Serve with some grated Parmesan or Gouda cheese for a delicious side dish. Or, use a little more broth for a delicious cream of bell pepper soup.
