Spelt rice pudding with apple compote

Ingredients for 2 servings:

  • 300 g spelt rice
  • 1 ½ cups milk, 1.5% fat or less
  • 1 cup of water
  • 1 tsp vanilla flavor
  • 2 packets of vanilla sugar
  • 4 apples
  • Cinnamon
  • Spice mix for baked apples
  • some water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Simmer the spelt rice pudding with the milk, water, vanilla sugar, and vanilla flavoring over medium heat for about 25-40 minutes (depending on how soft or firm you want it). Peel and core the apples, and cut them into small pieces. Cook them with a little water and the spices until you get a compote. FYI: Spelt rice pudding is a great alternative to regular rice pudding and is also healthier. This dish is suitable for WW, and my 3-year-old son absolutely loves it. Note: The spelt rice pudding won’t be as mushy as regular rice pudding.
