Roasted muesli with ginger, peanuts and coconut chips

Ingredients for 8 servings:

  • 50 ml maple syrup
  • 2 tbsp oil
  • 1 tsp ginger powder
  • 320 g muesli, e.g. B. 5-grain muesli
  • 100 g peanuts, salted, roasted
  • 100 g coconut chips

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Preheat oven to 150°C. Heat an ovenproof pan on the stovetop and combine maple syrup (or agave syrup, if you prefer) and oil. Stir in ginger powder. Add the remaining ingredients and roast for 5 minutes. Return the pan to the oven and continue roasting for 25 minutes, stirring occasionally. Allow the muesli to cool and transfer to a sealable container. Consume within one month. Serve fresh as vegan muesli with plant-based milk.
