Ingredients for 2 servings:
- 500 g carrot(s)
- 250 g low-fat yogurt
- 1 clove(s) garlic
- 1 ½ tbsp olive oil or sunflower oil
- 1 tbsp lemon juice
- pepper
- Salt
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Peel the carrots and grate them medium-finely. Mix in the lemon juice. Heat the oil in a pan and add the grated carrots. Cover and sauté over low to medium heat for about 10 minutes until tender, stirring occasionally. Remove the pan from the heat. Mix the yogurt, crushed garlic clove, pepper, and salt, and stir into the carrots. Let it sit briefly until the liquid is absorbed. Once cool, place it in a bowl in the refrigerator and let it sit for 30 to 60 minutes. Ideal as an antipasti, at barbecues, or as a light dinner. The dish is also delicious served lukewarm.
