Ingredients for 4 servings:
- 400 g fennel and some fennel leaves
- 6 tbsp natural yogurt
- 2 tbsp lemon juice
- 1 pinch(s) of sugar
- some salt and pepper
- possibly walnuts, chopped (tree nuts) or sultanas

Wash and trim the fennel, then finely chop or grate it in a bowl. Combine the yogurt, lemon juice, sugar, salt, and pepper and immediately mix with the fennel. Finely chop the fennel leaves and sprinkle over the top. Tip: Mix in chopped walnuts or sultanas. The yogurt can also be replaced with cream or quark with a little milk. It also tastes delicious with cooked fennel.
