Zucchini relish

Ingredients for 1 servings:

  • 3 kg zucchini
  • 1 kg onion(s)
  • 2 tbsp, heaped salt
  • 1 kg sugar
  • 1 liter herbal vinegar
  • 3 tbsp, heaped mustard, hot
  • 3 tbsp, heaped curry
  • 2 tbsp, heaped cayenne pepper
  • 3 tbsp, heaped paprika powder, sweet
  • 4 tbsp, heaped flour

Instructions

Working time approx. 40 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours 10 minutes

Slice the zucchini and onions into sticks. Place everything in a large pot, add salt, and stir. Let stand for 2-3 hours (or overnight). Add the sugar, herb vinegar, and mustard and simmer for about 20-30 minutes. Immediately after cooking, strain the spices through a sieve and stir in thoroughly. Bring to a boil briefly. Pour into jars and enjoy either cold or warm.
