Saya's light mushroom omelet

Ingredients for 1 servings:

  • 2 small potatoes, cooked
  • 200 g mushrooms
  • ½ onion(s), red
  • 6 cocktail tomatoes
  • 1 egg(s)
  • 1 tbsp cheese, grated (light)
  • 2 tbsp chives
  • 3 tbsp milk, low-fat
  • 1 tsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for a small appetite, low in fat, suitable for WW

Slice the potatoes and mushrooms. Finely slice the onions. Dice the tomatoes. Heat the oil in a small nonstick pan and fry the ingredients. Make an egg mixture from the milk, egg, and 1 tablespoon of chives. Season with salt and pepper. Pour the mixture over the potatoes and let it set with the lid closed. Finally, add the cheese to the omelet and replace the lid to melt the cheese. Serve garnished with 1 tablespoon of chives.
