Ingredients for 4 servings:

  • 1 large zucchini
  • 1 large carrot(s)
  • 2 potatoes
  • 1 onion(s)
  • 2 eggs
  • Flour for binding
  • Salt
  • pepper
  • possibly herbs, Italian style
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the carrot, potatoes, and onion and grate them into strips with the washed zucchini. Mix this mixture with the eggs. Thicken with flour and season to taste with herbs and spices. If necessary, discard some of the liquid (from the zucchini, etc.). Then fry in portions in a pan with heated oil to form patties. Serve hot.
