Omelette with chanterelles

Ingredients for 2 servings:

  • ½ bunch of spring onions
  • ½ bunch parsley, flat
  • 50 g bacon
  • Butter for frying
  • salt and pepper
  • 300 g chanterelles
  • 4 eggs
  • nutmeg
  • 50 ml carbonated mineral water
  • Grated cheese, if desired

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Clean and slice the spring onions and chop the parsley leaves. Fry the bacon in butter. Add the cleaned chanterelles and spring onions. Season with salt and pepper. Whisk the eggs with nutmeg, salt, and pepper. Stir in the mineral water. Melt the butter in the pan. Add half of the egg mixture. Let it set over low heat for 8-10 minutes. If you like, you can add some grated cheese to the omelet. Keep warm. Prepare the second omelet in the same way. Place the chanterelles on each half of the omelet, fold the omelet, and serve immediately. 388 kcal per serving.
