Poor Knights made from yeast plait with banana

Ingredients for 3 servings:

  • 6 slice(s) cake (yeast plait), stale, sliced
  • 2 m.-sized eggs
  • 100 ml milk
  • 1 banana(s), fully ripe
  • ½ vanilla pod(s), the pulp
  • some cinnamon
  • 1 pinch of salt
  • some clarified butter for frying
  • Maple syrup or sugar-cinnamon mixture

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Blend the eggs with milk and the peeled and sliced ​​banana. Add the vanilla bean paste, cinnamon, and salt. Transfer the mixture to a shallow dish. Toss the slices of plaited bread (cut in half if desired) in the mixture and let them rest for a while. Fry in heated clarified butter over medium heat until golden brown. Serve with maple syrup or a sugar-cinnamon mixture.
