Delicious zucchini pancakes

Ingredients for 1 servings:

  • 50 g spelt flour
  • 10 g puffed amaranth
  • 1 egg(s)
  • ½ tsp baking powder
  • 1 pinch of salt
  • ½ zucchini
  • 100 ml water
  • some milk or soy milk
  • Butter-vanilla flavoring
  • n. B. Sweetener of your choice, e.g. agave syrup, honey, sweetener
  • Cinnamon powder
  • Oil for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Combine the spelt flour with the puffed amaranth, cinnamon, baking powder, and salt. Grate the zucchini, squeeze some of the excess liquid, and mix with the remaining ingredients. Add flavoring and sweetener to taste. Brush a pan with a little oil and add a dollop of batter. Fry over medium-low heat, using little oil to prevent them from burning. Turn after about 2-3 minutes. I get about 5 pancakes out of the batter, depending on how much liquid I use.
