Ingredients for 4 servings:

  • 4 rolls or
  • 8 slices of toast
  • 2 large eggs
  • 1 packet of vanilla sugar
  • 1 tbsp sugar
  • 100 ml coconut milk
  • 1 tbsp butter
  • 1 jar applesauce or
  • Exotic fruits (e.g. pineapple, melon, etc.)

Preheat the oven to medium heat (175°C). It’s best to prepare the egg and coconut mixture in a soup bowl. To do this, whisk the eggs and coconut milk and stir in the vanilla and sugar. Next, slice the rolls and dip them, one at a time, on both sides in the egg and coconut mixture. It’s a good idea to press the rolls into the mixture with a fork so they absorb even more of it. Do the same with the toast. Heat a pan with butter and add the slices. Cook until golden brown on both sides. Important: Do not place the cooked slices in the oven with the pan, otherwise they will turn black. Place them on a baking sheet lined with parchment paper and place in the oven for 10 minutes to bake the insides. Applesauce or canned pineapple, as well as any other type of sweet fruit, go well with this.
