Blueberry pancakes

Ingredients for 2 servings:

  • 2 eggs
  • 200 g flour, sifted
  • 50 ml carbonated mineral water
  • 200 ml milk
  • 100 g brown sugar
  • 1 pinch of salt
  • 1 handful of blueberries
  • Fat for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

American Pancakes

First, separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks until frothy. Set both aside. Combine the sifted flour and brown sugar (white sugar works too), stir in the milk and mineral water. Then stir in the frothy egg yolks. Then carefully fold in the stiff peaks. Finally, roughly chop the berries and add them. Then, fry the batter over medium heat, adding tablespoon at a time, in a lightly greased nonstick pan. Cook for about 2-3 minutes on each side.
