Creamy onion soup

Ingredients for 4 servings:

  • 500 g onion(s)
  • 1 liter vegetable broth
  • 1 tsp oil (e.g. herb-garlic oil)
  • 400 g cream cheese
  • 1 tsp Parmesan, grated
  • salt and pepper
  • n. B. Croutons
  • e.g. chopped parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

with cream cheese

Thinly slice the onions. Heat the oil in a saucepan and sauté the onions. Deglaze with vegetable stock, bring to a boil, and simmer with the lid on for 10 minutes. Stir the cream cheese into the soup, season with grated Parmesan (to taste), salt, and pepper. Serve with parsley and croutons.
