Mozzarella and mango skewers

Ingredients for 4 servings:

  • 1 large mango(s)
  • 250 g Buffalo Mozzarella
  • 1 bunch of spring onions
  • 1 bunch of basil
  • 4 tbsp olive oil
  • 8 tbsp balsamic vinegar
  • 1 tbsp pepper, pink berries
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Make a marinade with the olive oil, balsamic vinegar, pepper, and salt. Cut the mozzarella into approximately 16 pieces and add them to the marinade for approximately 15 minutes. Meanwhile, peel and core the mango. Cut into pieces roughly the same size as the mozzarella. Cut the spring onions into approximately 2 cm long pieces. Thread a piece of mango, spring onion, mozzarella, and a basil leaf onto 16 toothpicks. Finally, lightly grind the pink peppercorns and sprinkle them over the skewers.
