Pearl barley pan with vegetables

Ingredients for 2 servings:

  • 200 g pearl barley, coarse
  • 1 large onion(s)
  • 1 bell pepper(s), red
  • ½ stalk(s) leek
  • 1 small can of corn
  • 1 small zucchini
  • 1 ½ tbsp oil
  • 4 tbsp soy sauce, dark
  • curry powder
  • Salt, if necessary
  • chili powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Healing cure for barley haters

Cook the pearl barley in salted water and rinse thoroughly in a sieve. Roughly dice the onion, bell pepper, and zucchini, and finely slice the leek. Heat the oil in a large pan and sauté the onions. Then add the pearl barley, bell pepper, and leek. Mix in the soy sauce and cook thoroughly, stirring occasionally. Finally, add the zucchini, cook briefly, and season the dish. You can complement this with vegetarian sausage rolls, but I think it’s better on its own.
