Lukewarm apple ragout

Ingredients for 2 servings:

  • 4 apples, for stewing e.g. Boskoop
  • 50 g apricot(s), dried
  • ½ cup walnuts
  • 1 tbsp sugar
  • 3 tbsp butter
  • Cinnamon, to taste, ground

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and quarter the apples, remove the cores, and cut the apple quarters into approximately 1.5cm-wide wedges. Rinse the apricots with hot water, dry them, and cut them into thin sticks. Roughly chop the walnuts. Melt the sugar in a pan, but do not let it brown. Add the butter, apricot sticks, and nuts. Mix in the apple slices and cook over medium heat, stirring gently, until the apples are tender but still have a bite. Sprinkle with cinnamon, if desired.
