Ingredients for 1 servings:
- 200 g cottage cheese, light, with herbs
- 100 g tomatoes, diced
- 50 g flour (organic wholemeal flour)
- e.g. parsley, fresh
- Salt
- some water as needed
Instructions

quick and healthy – as a snack or as a main course
Preheat oven to 250°C. Line a baking sheet with parchment paper. Combine all ingredients in a bowl and mix well. Drop the batter onto the baking sheet using a tablespoon. Place the sheet on the middle rack of the oven and bake until golden brown on one side. Then turn and bake until golden brown on the other side. Tastes great warm with rice as a side dish, but also delicious cold as a cookie. The whole batch with my ingredients has 346 calories. I made 14 cookies from this amount, so each contains about 25 calories.
