Chicory – pepper – fruit salad with yogurt – honey – dressing

Ingredients for 2 servings:

  • 2 chicory
  • 1 orange(s)
  • 1 small apple (Cox Orange)
  • 1 red bell pepper(s)
  • ½ bunch chives, cut into rolls
  • 150 g natural yogurt
  • 1 tbsp honey
  • 1 tbsp orange juice
  • Pepper, white
  • Salt
  • n. B. Walnuts, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the chicory, remove the bitter stalk, and then cut crosswise into approximately 1.5 cm wide strips. Peel and fillet the oranges, including the white pith. Reserving some juice for the dressing. If desired, halve the fruit segments again. Peel and quarter the apples, removing the core and cutting them crosswise into thin slices. Wash and trim the bell peppers thoroughly, then cut them into strips. Carefully mix everything together with the chives. Add the walnuts, if desired. For the dressing, mix together the natural yogurt and honey. Season with orange juice, salt, and pepper. Serve with baguette.
