Lemon curd tiramisu

Ingredients for 4 servings:

  • ½ organic lemon(s)
  • 300 g low-fat curd cheese
  • 3 tbsp powdered sugar
  • 400 g cream
  • 16 ladyfingers
  • 100 ml Limoncello or 90 ml lemon juice mixed with 50 g icing sugar
  • 230 g lemon curd

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Wash the unwaxed lemon with hot water, pat dry, and finely grate the zest. Squeeze the lemon juice. Mix the grated zest and juice with the quark and powdered sugar. Whip the cream until stiff peaks form and fold in. Place half of the sponge fingers in a small baking dish and drizzle with half of the liqueur or lemon juice and powdered sugar mixture. Then spread half of the quark cream and half of the lemon curd on top. Layer the other half of the ingredients on top in the same order: sponge fingers, liqueur, quark cream, and lemon curd. Let the tiramisu rest in the refrigerator for at least 2 hours.
