Portuguese chocolate mousse with marinated figs

Ingredients for 6 servings:

  • 250 g dark chocolate
  • 60 g butter
  • 1 tbsp port wine
  • 6 eggs
  • 3 tbsp sugar
  • 6 tbsp Madeira (Portuguese fortified wine)
  • 1 clove(s)
  • ½ tsp cinnamon
  • 50 ml orange juice
  • 1 tbsp sugar
  • 30 g butter
  • 4 figs, fresh

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Chocolate mousse with figs

Break the chocolate into small pieces and melt them with the butter in a bain-marie. Remove from the bain-marie and stir in the port wine. Separate the eggs. Beat the egg yolks and sugar until frothy and carefully mix them with the chocolate mixture. Beat the egg whites until stiff peaks form and fold them into the mixture. Refrigerate the mousse for 2-3 hours. Peel and slice the figs. Briefly boil the Madeira wine, cloves, cinnamon, orange juice, sugar, and butter. Let cool, then pour over the figs. Marinate the figs for 2 hours, drain, and serve with the mousse. A delicious variation on classic chocolate mousse.
