Spinach from the oven

Ingredients for 4 servings:

  • 800 g leaf spinach or root spinach
  • 1 onion(s)
  • 1 tbsp butter
  • salt and pepper
  • 1 tbsp paprika powder, sweet
  • 2 tbsp lemon juice
  • 2 eggs
  • 300 g yogurt
  • 125 ml milk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sort and wash the spinach. Finely dice the onion and sauté in butter until translucent. Add the spinach and sauté for 8-10 minutes, until wilted. Season with salt, pepper, and paprika. Place the spinach in a baking dish. Whisk the lemon juice with the eggs, yogurt, and milk, season with salt and pepper, pour over the spinach, and bake in the center of a preheated oven (180°C) for 30-40 minutes, until the yogurt is set. Serve the spinach warm or lukewarm.
