Ingredients for 2 servings:

  • 400 g potatoes, peeled and sliced
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp parsley, chopped (or herbs of your choice)
  • n. B. Salt

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Boil the prepared potatoes in salted water for about 15-20 minutes. Drain and collect the water. Mash the potatoes with olive oil, lemon juice, and, if desired (if too dry), a little more potato juice. Finally, stir in the parsley or herbs to taste. This goes wonderfully with all light roasts and pan-fried dishes. Note: The quantities of olive oil and lemon juice can be adjusted to suit your taste. The consistency should not be too thin—more of a smooth mash that will also hold sauces well.
