Zucchini potato pancakes

Ingredients for 4 servings:

  • 1 large zucchini, or 2 smaller ones
  • 2 eggs
  • 5 tbsp oat flakes, fine
  • 1 tsp salt
  • 2 tbsp breadcrumbs
  • Margarine for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

inexpensive, zucchini with a difference

Grate the washed zucchini and place it in a bowl. Add the oats, salt, and eggs, and mix everything with a wooden spoon. Gradually stir in the breadcrumbs until a smooth mixture forms. Heat the oil in a pan, add the batter a tablespoon at a time, and fry. This goes well with blackberry compote or applesauce.
