Zucchini fritters

Ingredients for 4 servings:

  • 400 g zucchini
  • 1 onion(s)
  • 1 clove(s) garlic
  • 6 tbsp wheat flour
  • 1 tsp baking powder
  • 2 eggs
  • salt and pepper
  • 2 tbsp vegetable oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Wash the zucchini and finely grate it. Drain any liquid and squeeze some of the grated zucchini with your hands if necessary. A little liquid should remain, however. Finely dice the onions. Press the garlic using a garlic press or grate it. Mix the vegetables with the eggs, flour, and baking powder and season to taste. The mixture should form a creamy, not too dry mixture. Heat oil in a pan and pour the mixture into the pan using a tablespoon. Fry over medium heat for about 4-5 minutes on each side until golden brown. A yogurt sauce is delicious with this sauce.
