Fruity couscous and melon salad

Ingredients for 3 servings:

  • 1 jar couscous, grainy
  • 1 bell pepper(s)
  • 1 large tomato(s)
  • 1 cup watermelon(s), chunked, pitted
  • 1 bunch of parsley
  • some mint
  • some olive oil
  • 1 lime(s)
  • some salt and pepper
  • possibly chili
  • possibly garlic, finely chopped

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Total time approx. 35 minutes

Place the jar of couscous in a bowl and add a glass of warm water. Let it swell. Cut the vegetables into small cubes. The melon also needs to be deseeded. Finely chop the parsley and mint and add. Once the couscous has swelled, crumble it and add it to the vegetables. Finally, add the lime juice and season with salt, pepper, and chili. Refrigerate until ready to serve.
