Zucchini-Halloumi skewers

Ingredients for 2 servings:

  • 250g halloumi
  • 1 zucchini
  • 2 tbsp tomato paste
  • 1 tsp chili powder
  • 1 tbsp olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cut the halloumi into approximately 16 equal-sized pieces. Wash the zucchini and cut or slice lengthwise into 16 thin slices, using a vegetable peeler or, if you prefer, a slicer. Mix a marinade from tomato paste, oil, and chili powder. Now line a zucchini slice, brush it with the marinade, and roll a piece of halloumi in it. Thread 4 pieces onto a wooden skewer. Place the skewers in an ovenproof dish, drizzle with a little olive oil and the remaining marinade, and grill in an oven preheated to 180°C using the grill function for approximately 12 to 15 minutes. Or grill on the barbecue for 10 minutes, turning once. Serve immediately and enjoy hot.
