Apricot casserole

Ingredients for 4 servings:

  • 1 small can of apricots
  • 4 tbsp schnapps (fruit brandy)
  • 4 egg yolks
  • 50 g sugar
  • 300 g yogurt
  • 2 packets of vanilla sugar
  • 250 g cream
  • 150 g semolina
  • 3 tbsp butter
  • Fat, for the shape

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Delicious and affordable

Drain the apricots thoroughly, then roughly chop them. Transfer them to a small bowl and drizzle with the fruit brandy. Preheat the oven to 180°C (350°F). Whisk the egg yolks and sugar until creamy and add the yogurt. Mix in the vanilla sugar, cream, semolina, and marinated apricots. Grease an ovenproof dish and pour in the semolina mixture. Place the butter in small pieces on top. Bake the casserole in the center of the oven for about 30-35 minutes until golden brown.
