Spelt pasta and minced meat pot with feta cheese

Ingredients for 4 servings:

  • 500 g spelt pasta
  • 400 g minced beef
  • 800 g mushrooms
  • 200 g feta cheese
  • 3 bell peppers
  • 1 large onion(s)
  • 2 garlic cloves
  • ½ bunch parsley, alternatively dried
  • 1 tbsp, heaped Ajvar, mild
  • 500 g tomatoes, pureed
  • 2 tbsp olive oil
  • salt and pepper
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cook the pasta in salted water according to the package instructions until al dente. Drain and set aside. In the meantime, peel and finely chop the onion and garlic. Wash and deseed the bell pepper, then cut into strips (or smaller, depending on your preference). Trim and finely chop the mushrooms. Add 1 tablespoon of oil to a large pan and stir in the minced meat over medium heat until crumbly and fry. Season lightly with salt, pepper, and cayenne pepper. Remove the minced meat. Add the remaining oil to the pan and fry the onions and garlic over medium heat. Add the mushrooms and bell pepper and fry briefly, then add the passata and ajvar and season with salt, pepper, and cayenne pepper. Add the minced meat and the finely diced feta cheese, heat through, and season to taste. Add the parsley. Place the pasta on a plate and cover with sauce.
