Noodles with satay sauce and chicken

Ingredients for 4 servings:

  • 2 tbsp olive oil
  • 450 g chicken breast fillet(s)
  • 2 red bell peppers, cut into strips
  • 4 spring onions, cut into rings
  • 250 g pasta
  • 125 g peanut butter
  • 1 tsp ginger root, fresh and grated
  • 2 tbsp soy sauce
  • 125 ml vegetable broth or chicken broth

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Heat the oil in a pan. Fry the meat for 5-7 minutes until browned. Add the bell peppers and spring onions and sauté for about 3 minutes until tender. Remove from the heat. Cook the noodles in salted water until al dente, drain, and return to the pot. Combine the peanut butter, ginger, soy sauce, and broth in a large pot. Bring to a boil over medium heat, stirring constantly. Add the vegetables, meat, and pasta, and mix. Tip: This dish can also be prepared as a vegetarian version without the chicken. Simply add more vegetables!
