Mustard soup with minced meat

Ingredients for 4 servings:

  • 2 onions
  • 3 bell peppers, colored
  • 3 tomatoes
  • 2 Pepper
  • 500 g minced meat, mixed
  • 1 tbsp butter
  • 4 tbsp tomato paste
  • 1 liter vegetable broth
  • 100 ml cream
  • 4 tbsp mustard, hot
  • 1 tbsp mustard, sweet
  • salt and pepper
  • 1 tsp sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel and slice the onion. Dice the bell peppers and tomatoes. Deseed and finely chop the chili peppers. Brown the minced meat and onion in butter until crumbly. Add the bell peppers, tomatoes, chili peppers, and tomato paste and sauté. Pour in the vegetable stock and cream and simmer for about 25 minutes. Season with mustard, salt, pepper, and sugar. Baguette goes well with this dish.
