Fish balls with lemon and dill sauce

Ingredients for 4 servings:

  • 500 g fish fillet(s), e.g. cod
  • 1 small onion(s)
  • ½ bunch of dill
  • ½ bunch parsley
  • 50 g breadcrumbs
  • some salt and pepper
  • some oil for frying
  • 2 tbsp butter
  • 2 tbsp flour
  • 400 ml vegetable stock
  • 1 lemon(s), juice
  • 100 g whipped cream
  • ½ bunch of dill
  • some salt and pepper
  • some sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

For the fish balls, cut the fish into pieces and place in a bowl. Dice the onion and finely chop the herbs. Finely chop everything in a food processor, mix in the breadcrumbs and season with salt and pepper. With wet hands, form the mixture into small balls and fry them in hot oil for about 5 minutes, turning all over. For the sauce, melt the butter and sauté the flour in it. Deglaze with vegetable stock and cream and simmer for about 10 minutes. Chop the dill and stir in, add the lemon juice and season with salt, pepper and sugar. Add the fish balls to the sauce and let stand for 5 to 10 minutes. Rice goes very well with this.
