Potato stew with sausage

Ingredients for 2 servings:

  • 5 large potatoes (floury)
  • Water
  • 1 cube of vegetable stock
  • 1 pinch of salt
  • some soup vegetables
  • 3 sausages (spicy Mettwurst)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the potatoes and cut them into bite-sized cubes. Place them in a suitable pot and fill with plenty of water. The water surface should be about 3-4 cm higher than the potatoes. Add a pinch of salt, the soup vegetables (amount as desired), the vegetable stock, and the finely chopped Mettwurst sausages. Let the mixture cook until the potatoes are nice and floury and the overall consistency is nice and creamy. Stir well occasionally. Add a little more water if necessary to prevent the mixture from becoming too creamy and to add a bit more liquid. Season to taste and add fresh herbs if desired.
