Horse steak with spicy onion sauce

Ingredients for 4 servings:

  • 4 horse steaks (preferably fillet steaks)
  • some margarine
  • 3 large onions
  • 2 tbsp tomato puree
  • 3 bay leaves
  • 250 ml red wine
  • 200 ml water
  • 2 cloves garlic
  • 1 chili pepper(s)
  • salt and pepper
  • 1 tsp instant meat broth
  • some paprika powder
  • some piri-piri
  • some oil

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 2 hours; Total time approx. 3 hours

Melt the margarine in a small frying pan. Meanwhile, thinly slice the onion and lightly brown it in the margarine. Add the tomato puree and fry lightly. Then deglaze with the red wine and reduce slightly. Add the water and meat stock, the spices and the piri-piri, press the garlic, and add it to the sauce. The sauce should now simmer gently for about 2 hours and reduce until it is slightly thickened. Heat the oil in a cast-iron pan. Now fry the steaks over high heat, ideally on both sides. Medium or well done, according to taste. We like them best medium. When the steaks are done, remove them from the pan and keep warm, deglaze the pan with the sauce, and season to taste. You may want to press in a little more garlic, but that’s a matter of taste. Place the steaks on 4 plates and top with the sauce. Serve with French fries and green salad.
