Corn and minced meat soup

Ingredients for 6 servings:

  • 500 g minced beef
  • 1 large onion(s)
  • 2 can/n tomatoes, (pizza tomatoes)
  • 1 pack of tomatoes, pureed
  • 500 g mushrooms (fresh)
  • 1 can of corn
  • 1 bottle of Cremefine, for cooking or other cream substitute
  • 2 garlic cloves
  • 1 tsp sugar
  • 1 tsp olive oil
  • salt and pepper
  • Cayenne pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and dice the onion, and fry until translucent in hot olive oil. Then add the minced meat and fry. Season the mixture with salt, pepper, and garlic. Deglaze the mixture with the pizza tomatoes and passata. Add a teaspoon of sugar, cayenne pepper, and paprika, stir, and simmer for a good 30 minutes. In the meantime, clean and slice the mushrooms. After 30 minutes, add the mushrooms and drained corn kernels to the pot and simmer. After 20 minutes, stir in the crème fraîche and bring the soup to a boil. We like to serve it with baguette slices.
