Annette's leek cream soup with minced meat and mushrooms

Ingredients for 6 servings:

  • 500 g minced meat, mixed
  • 1 liter vegetable broth
  • 500 g creamed leeks, frozen
  • 250 g herb cheese spread
  • 250 g cream cheese spread
  • 1 cup crème fraîche
  • 1 can mushrooms, sliced
  • 1 pinch(s) of salt and pepper
  • nutmeg
  • some sugar, optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

without onions

Thaw the creamed leeks in a saucepan over low heat (if they aren’t already thawed). Brown the minced meat in another saucepan and season with salt and pepper. Gradually add the other ingredients to the fried minced meat in the order listed. Simmer for about 5-10 minutes. Finally, season to taste with nutmeg, salt, and pepper (and a little sugar if desired).
